3-INGREDIENT NUTELLA LAVA CAKE
Makes 1 Takes 2 mins
• 30ml self-raising flour
• 60ml Nutella chocolate spread
• 45ml milk
Combine the ingredients in a microwave-safe mug. Microwave for about 30 seconds, or until the sides are set, but the centre is still gooey.
Serving suggestion: Serve with vanilla ice cream and sprinkle with heart sweeties, if you like.
PEANUT BUTTER VALENTINE'S POPCORN
Serves 15 Takes 10 mins + cooling
• 2 bags plain microwave popcorn
• 250ml brown sugar
• 250ml golden syrup
• 250ml smooth peanut butter
• 80ml red and pink sweets and sprinkles
1│Pop the popcorn in the microwave according to packet instructions. Remove any unpopped kernels. Place in a large bowl.
2│Combine the sugar and syrup and heat in the microwave for about 3 minutes, stirring every 1 minute until it comes to a boil. Stir in peanut butter. Pour over popcorn and stir until well coated. Stir in the sweets. Cool. Store in an airtight container.
CHEESECAKE TARTS
Makes 4 Takes 20 mins + cooling
• 200g packet Tennis biscuits
• 100g butter, melted
• 30ml golden syrup
For the filling:
• 230g tub cream cheese, at room temperature
• 180ml castor sugar
• 5ml vanilla essence
• 160ml cream
• 2 eggs
1│Blitz together the biscuits, butter and syrup until a sandlike texture is formed. Press into the bottoms of 4 x 11cm microwave-safe tart cases. Refrigerate for at least 15 minutes.
2│For the filling, beat together the cream cheese and sugar. Beat in the vanilla and cream until combined. Add eggs, one at a time, beating until incorporated. Divide between the moulds.
3│Microwave for about 2 minutes 30 seconds, or until the sides are set with a jiggle in the middle. Cool completely in the fridge.
Serving suggestion: Serve topped with raspberries.
MICROWAVE CHOC BISCUIT FUDGE
Makes 15 Takes 15 mins + cooling
• 500g icing sugar
• 125ml cocoa powder
• 125g butter, cubed
• 60ml milk
• 375ml Marie biscuits, roughly crushed
• 8ml vanilla essence
1│Line a 24cm dish with baking paper. Sift together the sugar and cocoa in a large, microwave-safe bowl. Pour milk over (don’t mix!). Place butter on top. Microwave for 1-2 minutes, or until the butter has almost completely melted.
2│Working quickly, stir until combined. Stir in biscuits and vanilla. Immediately pour warm fudge into prepared dish and spread until even. Cool in the fridge for at least 1 hour, or until set. Cut into hearts with a 6cm cookie-cutter or into squares with a knife. Store in an airtight container in the fridge.
