These muffins are yummy, glutenfree and packed with nutrients that soothe and heal the thyroid...

● 6 eggs
● 3/4 cup coconut flour
● 3/4 cup maple syrup
● 1/2 cup unsweetened pumpkin puree
● 1 1/2 tsp. pumpkin pie spice
● 1 tsp. lemon juice
● 3/4 tsp. baking soda
● 1/8 tsp. salt
● 1/4 cup pumpkin seeds

➤ Combine all ingredients except pumpkin seeds; mix well. Divide evenly among 12 lined or greased muffin cups. Top with seeds. Bake at 350°F until centers are set, 25–30 minutes. Cool and enjoy.
