Peach Pouches

4 peaches, halved, 1 Tbsp toasted walnut oil , ¾ c strawberries, ½ tsp freshly-grated lemon zest, ⅛ tsp ground cinnamon, 1 Tbsp sliced almonds
Preheat oven to 180°C. Mix strawberries, lemon zest, and cinnamon in a bowl. Let stand for 10 minutes. Toast almonds. Brush peaches on all sides with oil. Place on grill cut-side down and grill
10 or 12 minutes, turning once, or until heated through but still holding shape. Coat ramekins with cooking spray. Divide peach mixture evenly. Top each half with the toasted almonds. Bake until topping is golden.
